About This Matcha
YASHIKI is a single-cultivar matcha made entirely from Yabukita, grown in Yuyatani, Ujitawara, Kyoto—a historic tea-growing area located near Uji, long associated with the development of Japanese green tea. Ujitawara is characterized by hilly terrain, mineral-rich soils, and cool seasonal conditions that support steady leaf growth and layered flavor development.
Yabukita is Japan’s most widely planted tea cultivar, known for its balance, resilience, and adaptability across regions. When processed as matcha and left unblended, Yabukita tends to express a grounded profile with clear savoriness, moderate bitterness, and familiar green tea character. Its consistency makes it a reference point for understanding how place and processing shape flavor.
Unlike blends—which are designed for balance and repeatability—single cultivar, especially single origin matcha, reflects the natural interaction between one cultivar, one place, and one harvest. This matcha is offered without blending or adjustment, allowing Yabukita from Ujitawara to show its character as shaped by the local environment and harvest conditions.
Single cultivar matcha is typically more expensive due to smaller production volumes and limited flexibility compared to blends. This does not imply superiority—only greater specificity.
