About This Tea

This sencha comes from Yame, Fukuoka, one of Japan’s most established tea-producing regions, known for producing teas with depth, sweetness, and a smooth, rounded character.

Unlike lightly steamed styles, this tea is processed using fukamushi (deep steaming). The longer steaming time softens the leaf structure, resulting in finer particles and a fuller-bodied infusion. This method brings out more sweetness and umami while reducing astringency, creating a tea that feels more dense and integrated in the cup.

Made from a blend of Yabukita and Saemidori, this sencha reflects both structure and softness—combining the familiarity of Yabukita with the brightness and clarity often associated with Saemidori.

Japanese-Style Brewing (Kyusu or Shiboridashi)

  • 2.5 g tea · 50 ml water
    • 1st infusion: 60 °C · 1 minute
    • 2nd infusion: 75 °C · 35 seconds
    • 3rd infusion: 85 °C · 1 minute

Western-Style Brewing

  • 3 g tea · 250 ml water
    • 75 °C · 1½ minutes
